Our homegrown “stuffing tomatoes” are not only great for stuffing, but turned out to be delicious for roasting!

 

ROASTED TOMATOES

Slice tomatoes 1/4 inch thick and lay on parchment paper or greased, foil-lined cookie sheet.

Drizzle with olive oil and sprinkle with desired spices: salt (kosher salt works great with this), pepper, garlic powder or minced garlic, Italian seasoning, and chopped basil. Or create your own spice blend!

Roast at 450° until desired doneness, 10-25 minutes; tomatoes should be brown or black in some spots.

Can also top with shredded Asiago, Romano, or Parmesan cheese at the end and broil until cheese begins to brown.

Enjoy on toast, or alone!
