SAUSAGE RICE CASSEROLE
1 LB Sausage
1 lg or 2 med. onions, chopped (2 cups or more)
2 sweet peppers, chopped (any color)
2 Tablespoons (up to one full head) of Shaky K garlic, pressed or sliced
*additional seasonal non-starchy chopped vegetables as you may desire*
1 cup par-boiled rice
3-4 cups chopped fresh tomatoes, or 1 qt canned tomatoes, or 1 lg can store-bought
Brown sausage. Add vegetables except garlic and stire occasionally until well-browned and beginning to stick. Add garlic and cook only a moment, stirring frequently. Add rice and cook until well-combined, just a minute or less. Add tomatoes and stir well. Bring to a high boil, stir again, cover and turn to low for 20 mins. Turn off, let sit 5 mins, then stir and enjoy. Riced cauliflower may be substituted for a lower carbohydrate meal. Leftovers can be used as a burrito or taco filling.
